For Valentine’s Day, I thought I’d take another pass at hand pies. I had cherry pie filling left over from last summer’s attempt that I’d thrown in the freezer, so all I had to do was whip up a new pie crust.
This time around, the pie crust was just right. I was worried about the filling leaking out all over the place though, so I went a little conservative on stuffing the hand pies, so that the end result was more of a homemade pop tart than a hand pie (according to Edie).
Still, they were good – much better than the last attempt – and this time around, I made sure to have ice cream on hand.
Other baking success this weekend included a batch lemon cheesecake morning buns. It’s a pretty fool proof recipe – the dough is a dream to roll out and work with – so much so that I use it for my cinnamon buns now too. The recipe makes two pans, which I normally either share it with a friend or stick one in the freezer, but as I was headed to a Ladies’ Brunch, I had a pan for the house and a pan to take. They were a hit in both locations and the brunch was quite fun. Good food, good company, an impressive Bloody Mary bar and lots of prosecco within walking distance of home – win-win-win!

I’m a huge fan of cherry anything – there might be a little filling left to go on ice cream (a gluten free dessert!). And those buns are always, always good.
